Spiced Caramelised Apple Crumble Cake
Ingredients:
Caramelised Apples
50g unsalted butter
250g peeled and sliced apples
40g soft brown sugar
1 tsp cinnamon
1/2 tsp mixed spice
Sponge Cake
75g unsalted butter
100g caster sugar
50g soft brown sugar
1 large egg
50g sour cream
1 tsp vanilla extract
175g plain flour
2 tsp baking powder
1/2 tsp cinnamon
1/2 tsp mixed spice
1/4 tsp nutmeg
pinch of salt
20g soft brown sugar and 1/2 tbsp cinnamon for the cinnamon sugar layer
Crumble Topping:
100g unsalted butter
100g brown sugar
175g plain flour
1/2 tsp cinnamon
pinch of salt
Method:
Caramelised Apple:
Start with the apples so they have time to cool. Melt the butter in a saucepan and add the apples, sugar, and spices, stirring occasionally until the apples have softened slightly, then leave to cool.
Sponge:
Cream the butter and sugars together until pale and fluffy, and add the egg , sour cream and vanilla,
Sift in the flour, baking powder, salt and spices and mix until just combined.
Mix the cinnamon with the sugar and leave to one side.
Crumble Topping:
Melt the butter and leave to cool for a few minutes,
Mix with the sugar, spices, salt and flour and bring together into a clumping crumble.
To assemble:
Pre-heat the oven to 175 C (fan)
Grease and line an 8 inch square tin., and fill with half of the batter.
Sprinkle the cinnamon sugar evenly on top, then add and smooth out the remaining batter.
Spread the cooled apples evenly on top, try to avoid adding all of the excess liquid, but some is fine.
Top with the crumble mixture and press it down slightly.
Bake for around 40 minutes, then leave to cool fully before taking out the tin and cutting into squares.
