Cheese and Olive Breadsticks

Deliciously chewy cheese and olive breadsticks

Makes around 8

Ingredients:

  • 450g bread flour

  • 2 tsp dried instant yeast

  • 1 tsp caster sugar

  • 1 tsp salt

  • 300ml warm water

  • 3 tbsp olive oil

  • 80g green or black olives (halved)

  • 80g cheddar cheese (cut into small cubes)

  • Extra olive oil for greasing

  • Extra flour for dusting

  • Semolina flour for dusting (optional) 


 Method:

Please note - this can be done by hand but the dough is very sticky, so I highly recommend using a standing mixer with a dough hook attachment.

  1. In the large mixing bowl of your standing mixer, add the flour, yeast and sugar and mix together .

  2. Fix the bowl into the standing mixer and using the dough hook attachment on a low speed, add 3/4 the water, yeast, and olive oil.

  3. Slowly add the remaining water and then knead on a medium speed for around 8 minutes, until the dough is smooth. The dough should be quite sticky - if it is too dry, add a little more water, half a tablespoon at a time. If it is too sticky, add a little more flour. 

  4. Once the dough is smooth, add the halved olives and cubed cheese and knead again until evenly distributed throughout the dough. 

  5. Transfer the dough into a well oiled tray, approximately 23x33cm, and using your fingers, work the dough to the ends of the tray. 

  6. Cover the dough and leave to rise until doubled in size (1-1.5 hours) 

  7. Dust your worktop with flour and semolina four and once the dough has rise, carefully tip it out onto the worktop, gently knocking some of the air out and shaping it into a rectangle if it becomes misshapen. 

  8. Dust the top of the dough with flour and semolina and carefully cut the rectangle along it's longest edge into around 8 or 9 strips. 

  9. You can either bake them like this, or carefully twist the strips to give them a more interesting shape. 

  10. Arrange the breadsticks onto a lined baking tray, and dust with a little more semolina flour if necessary.

  11. Cover again, and leave to rise for another 20 minutes

  12. Meanwhile pre-heat the oven to 200 C (fan) 

  13. Once the dough is ready, bake for around 20 minutes until risen and golden brown. 

  14. Enjoy!
